Here is a healthy cookie recipe that I make for Landon. He is a very hyper 2 1/2 year old without any sugar in his system, and then add a bit of sugar and he cannot control himself. I found the recipe in a magazine about a year ago and have tweeked it a bit. Landon has to be the pickiest eater ever, so given that this recipe has healthy ingredients in it, I thought he maybe wouldn't like the cookies. Wrong...he loves them!
Some of the ingredients you cannot find in your regualr grocery store. I shop at a health food store in Red Wing called Simple Abundance. I know there is a health food store in Northfield, too, but I don't know where. Don't be afraid to try them....they really are good!

1 cup white sugar (I use splenda)
3/4 cup oil (I mix olive oil and canola oil to make 3/4 cup)
2 eggs (or 1/2 cup refrigerated or frozen egg product, thawed)
1 tsp. vanilla
1 1/2 tsp. baking powder
1/4 tsp. baking soda
3 tbsp. powdered non fat dry milk
1/4 cup wheat germ
1/4 cup flax seed
1/2 cup oat bran
1/2 cup wheat bran
1 cup whole wheat four
1 cup regualr rolled oats
1/2 cup mini semi sweet chocolate chips
1/2 cup chopped walnuts (optional)
1/4 cup unsweetened shredded coconut (optional)
Heat oven to 350 degrees Using an electric mixer, beat sugar and oil. Add eggs and beat well. Mix in vanilla, baking powder, baking soda, and powdered milk. Add wheat germ, flax seed, oat bran, and wheat bran and mix for 2 minutes. Add whole wheat four and rolled oats and mix until a thick but sticky dough forms. Stir in by hand, the chocolate chips (and walnuts and coconut if desired). This dough will be much thicker than the cookie dough you are used to. Form into balls and put on ungreased cookie sheet. Flatten with a small glass before putting in the oven. Bake for 10 to 12 minutes. Enjoy!.

Those sound really good. I've been making whole wheat muffins for the breakfast on the go. If you substitute natural unsweetened apple sauce for any oil it will be much healthier and you won't notice the difference. Also, instead of sugar/splenda try all natural maple syrup or honey....it is healthier "from the earth" sugar.
I've heard that you can substitute apple sauce for oil. The lady I used to work with did it all the time. Sure wish I could bake! Unfortunately, that is not something I ever mastered. I can cook up a storm, but cooking and baking are two different worlds! Dean and I just got home from camping up near Siren Wisconsin. We left last Thursday. It was cold at night! I should have made some Rusp! (how do you spell that anyway???)
Hi Lindsay, Honey and maple syrup are natural sugars, but both are higher in carbs, calories and glycemic index than sugar. Just a tidbit from a Type II Diabetic. :)
